Mornings are busy in our home, so the more we prepare breakfast foods ahead of time,
the more efficient we can be, especially when we are in a rush.
These make ahead, grab and go raw granola bars are perfect for breakfast or as an energy
boost any time of the day.
These crunchy yummy ingredients also make great toppings for chia seed puddings or
coconut yogurt.
I also love to eat them with an almond milk green tea latte!
Yum!
Raw Maple Almond Raisin Coconut Oat Bars
Ingredients
1 organic rolled oats
1 cup shredded unsweetened coconut
3/4 cup raw almonds, roughly chopped
1 cup organic raisins
1/2 cup maple syrup
1/2 cup raw organic almond butter
1 teaspoon cinnamon
Directions
Line a baking dish with parchment paper then set aside.
Add the rolled oats, shredded coconut, almonds, raisins and cinnamon to a large bowl.
Stir the ingredients together.
Next, add the maple syrup and almond butter into the large bowl and stir everything until well combined.
I like to use my hands to blend and squeeze the wet and dry ingredients together as well.
Transfer the mixture to the lined baking dish and then use your hands to press the mixture firmly into the dish.
If it’s too sticky, you can add another piece of parchment paper on top.
Once the surface is smooth and level place the dish in the refrigerator and allow the bars to set
for at least 4 hours or overnight.
Once they are firm enough use the parchment paper to remove them from the dish.
Cut them into 12” bars lengthwise and then perpendicular down the center using a large knife,
Store your bars in an airtight container in the refrigerator for up to 2 weeks.
When you are ready to eat them, chow down and enjoy!

This sounds like a nice, sweet treat without being overly indulgent. Perfect breakfast fare. I have been making the same boring old granola for awhile now, time to switch things up.
