I have been adding nutritious chia seeds to my smoothies for quite a while, but I hadn’t
really experimented with other creative ways to enjoy chia seeds until I tasted my first
mouthwatering dish of berry chia seed pudding at a local organic cafe.
The subtle yet sensational flavor blend of sweet, tangy and creamy satisfied my taste buds
and made me an instant fan!
I’ve been trying variations on that theme ever since.
Whatever I have in my kitchen ends up in my chia seed creations, so my fresh, ripe mango
and yesterday’s raw almond coconut raisin granola became the key ingredients in today’s
Crunchy and Creamy Mango Raw Almond Granola Chia Parfait.
I promise you that it will not disappoint!
Each delicious spoonful of tangy mango, creamy chia pudding and crunch granola brought
a smile to my face!
It was just the right combination of flavors, textures, fiber and nutrients I needed to start
my day feeling healthy, happy and ready to face the challenges of the day ahead.
Of course, you can substitute any fresh, juicy fruit for the mango in this recipe.
Raspberries, strawberries, blueberries, blackberries, peaches, apricots or bananas have
worked well in my other chia seed pudding parfaits.
Now it’s your turn to make some magic.
Mango Raw Almond Granola Chia Seed Parfait
Serves 3
Ingredients
2 Tbsp organic chia seeds
1 cup unsweetened almond milk
2 Tbsps organic maple syrup
1 Tsp organic vanilla extract
1 Tsp organic cinnamon
1 organic mango – sliced into chunks
1/2 cup homemade raw almond granola (see recipe here)
Directions
To make your chia pudding:
Place the chia seeds with the almond milk, maple syrup, cinnamon and
vanilla in a bowl or jar and stir them well together.
Cover the bowl and store it in the fridge overnight or at least a few hours.
Once the pudding thickens take it out of the refrigerator.
Add more maple syrup, if you want it sweeter.
Add a bottom layer of granola.
Next add a layer of chia pudding.
Add another layer of granola.
Next add a layer of mango chunks.
Add another layer of chia pudding.
Then add another layout of mango chunks.
Finally, top with more raw granola.
Now grab a long spoon, dig in and enjoy!
