Vegan pumpkin mousse can also be enjoyed anytime for a healthy dessert.

It can be layered with whipped coconut cream for a gorgeous parfait topped with maple syrup and shredded coconut,

pumpkin seeds, and slivered almonds.

Pumpkin mousse can also be layered with coconut yogurt and crunchy granola for a yummy fall breakfast.

Vegan Pumpkin Coconut Cream Mousse

Ingredients

1/2 cup coconut cream (from 1 13.5 oz can full-fat coconut

1 cup canned pumpkin puree (not pumpkin pie filling)

2 tbsp maple syrup

1.5 tsp pumpkin pie spice or 1 tsp cinnamon, 1/4 tsp ground ginger, and 1/4 tsp ground nutmeg

Directions

Place a can of full-fat coconut milk in the refrigerator overnight in order to make the coconut cream,

When you’re ready to make your pumpkin mousse, open the can of coconut milk and scoop the thickened coconut cream off the top and into a mixing bowl (or blender if using), leaving the watery part behind. Note: 1 can of full-fat coconut milk produces about 1/2 cup of coconut cream.

Now, add the pumpkin, pumpkin pie spice, and maple syrup.

Mix these ingredients until they are completely smooth.

Divide this pumpkin mousse mixture into two containers.

Place your pumpkin mousse in the refrigerator for a few hours until it is firm.
