It all started with that Thai Peanut Dressing at our cozy little local Thai restaurant.
After that delectable meal, I couldn’t get enough of that flavor.
So lately, I have been craving peanut butter a lot.
That’ s why many of my recent food preparations involve peanut butter.
From peanut butter smoothies to peanut butter oatmeal to peanut butter sauce to peanut
butter salad dressing to peanut butter cookies, the creamy, nutty flavor of peanut butter
has rocked my palate!
To my delight, all of my peanut butter-based creations taste amazing.
I love to make delicious, vegan Peanut Butter Vanilla Oat Cookies.
My family loves to snack on them and I don’t mind because they are made from healthy,
wholesome ingredients, so I keep our cookie jar stocked!
And best of all, this recipe is flourless.
Many people have gone flourless for specific health reasons.
Some do so because they think the gluten in flour aggravates other medical conditions such as
irritable bowel syndrome, rheumatoid arthritis or asthma.
Others believe avoiding flour makes them feel better.
Try this flourless recipe for Peanut Butter Vanilla Oat Cookies.
Peanut Butter Vanilla Oat Cookies
Makes 36 cookies
Ingredients:
¾ cups organic peanut butter
¼ cup softened vegan butter
3/4 cup coconut palm sugar
1 vegan egg replacer
1 teaspoon organic vanilla
1 tsp baking soda
2 ½ cups organic oats
Directions:
Preheat oven to 350 degrees F.
In large bowl, cream together vegan butter, peanut butter and sugar.
Add egg replacer, vanilla and baking soda until creamy. Beat
well.
Stir in the oats until combined.
Drop by tablespoonful onto non-stick cooking sheets.
Bake for 8-10 minutes or when they start brown slightly around the edges.
Let cool before serving.
I love to eat them with a green tea latte or with a cup of almond milk.

I have a secret, i never make cookies, I just dump peanut butter powder in with quinoa and stir until it’s LIKE a cookie dough consistency 🙂

Hi! I followed the instruction exactly and was left with a crumbly mess! I added more peanut butter and butter to try to make it at least stick together (which helped). But after baking they just disintegrated in my hand! 🙁 HELP!! What happened??
