I never need an excuse to make and eat a vegan wrap sandwich.
Wraps are the ultimate quick, easy, satisfying and filling lunch choice for me.
So when I read the VeganMoFo prompt, “Best Sandwich Ever”, I new this healthy
and delectable Chickpea Hummus Salad Wrap was the way to go.
However, it is also one of my favorite grab and go items from my local vegan take-out
restaurant.
I hope you are lucky enough to have a couple in your town!
I had all of the fixins on hand in my kitchen, so whipping together this wrap sandwich
was no-brainer.
Of course, you can substitute any of the ingredients for items that you have available
in your kitchen.
Wraps are best eaten fresh so I only made two, but you can multiply the ingredients to
make as many wraps as you need to.
There’s nothing less appealing than a soggy wrap, so if you carry a wrap for lunch, I’ve found
that the key to a satisfying dining experience is to limit wet ingredients so your wrap doesn’t
get soggy before you can gobble it up!
Chickpea Hummus Salad Wrap
Serves 2
Ingredients:
2 whole wheat wraps – use gluten free wraps, if desired
1/4 cup hummus
1/8 cup vegan feta cheez-chopped or crumbled
A handful of mesclun lettuce
1/4 cup chickpeas
1/4 cup cucumber-diced
1/4 cup tomato-diced
!/4 cup red onion-diced
1/4 cup black olives-sliced
2 teaspoons dried Italian seasoning mix
Wash and dry the lettuce.
Wash and chop the rest of vegetables.
Place the whole wheat wrap on a plate.
Spread the wrap with hummus.
Sprinkle on a little crumbled or chopped vegan feta cheez
Top the hummus with lettuce and top the lettuce a little more hummus.
Next add chickpeas, then olives, cucumber, onion and tomato.
Sprinkle a little dried Italian seasoning across the vegetables.
Gently pat down the ingredients.
Grab one end of the wrap and slowly roll up the wrap and ingredients into a firm coil.
Secure with a toothpick, if needed.
Slice the wrap sandwich in half with a sharp nice.
That’s it!
It’s a wrap!
Eat up and enjoy!
