Cauliflower is one of the most versatile vegetables.
For years, I avoided eating this pale, white, relatively-bland cruciferous vegetable.
Now, nearly every day I discover delicious new ways to prepare and enjoy cauliflower.
From spicy cauliflower wings to roasted cauliflower steaks to cauliflower pizza and more, there are
so many delightful cauliflower recipes to try.
This creamy, cheesy, vegan cauliflower au gratin casserole is a mouthwatering way to enjoy cauliflower.
Lightly steamed cauliflower is tossed with vegan cream cheese, coconut cream, vegan butter, curry powder,
nutritional yeast, garlic powder, and dried dill, topped with shredded vegan cheese blend, vegan parmesan
cheese, and crumbled tempeh or coconut bacon then baked in a casserole dish.
Once baked, this steamy cauliflower casserole is sprinkled with chives and ready to eat!
Vegan Loaded Cauliflower Au Gratin Casserole
Prep time: 10 minutes
Cook time: 15-20 minutes
Serves: 6
Ingredients:
4 c. cauliflower florets, chopped into bite-sized pieces
6 oz. vegan cream cheese, cut into chunks
¼ c. coconut cream
3 tbs. unsalted vegan butter, softened
¼ tsp. garlic powder
2 tsp curry powder
½ t. dried dill
Sea salt and black pepper, to taste
1 tbs Bragg Premium Nutritional Yeast Seasoning
1/2 c. vegan parmesan shredded cheese
1½ c. vegan cheese blend, shredded
4 strips tempeh or coconut bacon, cooked and crumbled
1 tbs. fresh chives, chopped
Directions:
Place top oven rack in the center position and preheat oven to 400°F.
Place the cauliflower in a steamer basket on top of a pot with boiling water and steam until fork-tender, around 6-7 minutes.
Remove from heat and transfer cauliflower into a cold water bath to prevent further cooking. Drain well and pat dry.
Transfer steamed cauliflower to a large bowl and add vegan cream cheese, coconut cream, vegan butter, curry powder, nutritional yeast, garlic powder, and dried dill.
Season with salt and black pepper, to taste, and toss to combine.
Transfer to an oven-safe casserole dish and top with shredded vegan cheese blend, vegan parmesan cheese, and crumbled tempeh or coconut bacon.
Place in pre-heated oven and roast until vegan cheese is melted and nicely browned on top, around 8-10 minutes.
Remove from oven and serve immediately topped with fresh chives.
