There’s nothing quite as delectable as fresh, organic strawberries in season.
So in this recipe, the strawberries are the main flavor focal point.
They are substantial enough on their own to pair perfectly with a basic bed of mixed greens topped with a light drizzle of good olive oil and aged balsamic vinegar.
Topping this salad with pecans and vegan feta cheese provides just enough punch to elevate this combination to special treat status.
Seasonal Mixed Greens with Vegan Feta and Strawberries
Ingredients:
4 cups of organic mixed greens of your choice – i.e. romaine, arugula, mesclun, etc.
1 organic red onion
3 T. extra virgin olive oil
sea salt and cracked black pepper, to taste
6 whole fresh organic strawberries
1/2 cup organic pecans
Vegan feta cheese
Directions:
Wash and tear salad greens.
Cut red onion into thin slices.
Mix with salad greens.
Divide salad greens among 4 plates and drizzle with olive oil and aged balsamic vinegar.
Sprinkle a little sea salt and cracked black pepper on the salad.
Slice each whole strawberry into several equal-sized segments.
Sprinkle a few pecans across each salad.
Drizzle strawberries and pecans with a little olive oil and aged balsamic vinegar.
Break up the block of vegan feta cheese into chunks.
Sprinkle a few chunks of vegan feta cheese on top pf each salad and serve.
