During the fall months, homes and stores become filled with all sorts of fall imagery, and so the sight of pumpkins is never absent during these months, but far beyond being a simple decoration, pumpkins are an ideal squash that can be used in all sorts of baked goods like cakes and pies.
When I think of the fall season– and my favorite foods and flavors — vegan pumpkin spice latte comes to mind.
It has all the lovely flavors of pumpkin pie in a cup!
Many of us love ordering this seasonal drink from our favorite coffee shops, but they often contain dairy, additives and too much sugar, in addition to being quite pricey.
So why not make your own vegan pumpkin spice latte at home.
It’s quick, easy and delicious!
Pumpkins are not only good to eat but they are good for you too!
They are high in fiber, containing more than 20% of your daily recommended dose, and a great source of b vitamins.
The B vitamins and fiber make the pumpkin a valuable ally against high blood pressure and strokes, thus protecting the heart over a period of time — and the seeds can be baked and salted, turning them into a delicious snack that can make it possible for you to enjoy this winter squash for months to come.
Studies have also shown that pumpkins can prevent bone loss and reduce kidney stones.
Quick and Easy Vegan Pumpkin Spice Latte
Ingredients
2 tablespoons pumpkin puree
2 tablespoons pure maple syrup
1/2 teaspoon pumpkin pie spice mix – or a little cinnamon, ginger, nutmeg and cloves
1/2 cup unsweetened non-dairy milk (coconut, cashew, almond, soy, cashew)
1/2 cup strong brewed coffee, or 1-2 shots of espresso
Vegan whipped cream (optional)
Directions
Add 2 tablespoons pure maple syrup and 2 tablespoons of pumpkin puree to a small pot, over medium heat.
Stir the pumpkin puree mixture, then add pumpkin pie spice mix (or simply add 1/4 teaspoon cinnamon, and a tiny pinch of ginger, nutmeg and cloves) followed by non-dairy milk of choice.
(I find that coconut milk makes the richest latte.)
Continue to stir, warming the mixture, however do not to bring it to a boil.
Turn off the heat, and stir in coffee (about 1/2 cup strong brewed coffee, or 1-2 shots of espresso).
Taste and adjust as needed.
Pour your pumpkin spice latte into your favorite mug, and top with plenty of vegan whipped cream, if desired!
Sprinkle a little more pumpkin pie spice mix on top.
Alternate Vegan Pumpkin Spice Latte Blender Recipe:
Ingredients
1 cup of your favorite brewed coffee
1 tablespoon pumpkin puree
1 teaspoon almond butter
1 tablespoon maple syrup
1/4 teaspoon pumpkin pie spice
Directions
Add all of the ingredients to your blender.
Blend until smooth and creamy.
Taste and adjust the seasonings as needed
Now, pour the blended mixture into a mug
Sip slowly and savor the flavors of fall.
