It’s quite ironic that the first item on this list isn’t actually green. Forgive me but I truly believe that the best vegetables to include in your juices are carrots. They’re obviously healthy as a famously good source of beta carotene, potassium, vitamin K1, and antioxidants. They’re also pretty juicy, in fact, they’re probably one of the juiciest veggies you could get your hands on. Plus, carrots are simply delicious. A lot of people rave about carrots and put it on practically any dish from viands to stews and even cake. Carrots in itself can make a pretty decent green juice, so there’s that.
2. Kale
Kale is one of those green and leafy vegetables that actually packs quite a punch for all of you health-conscious females and males out there! That’s why it’s always a favorite snack! But did you know you can also whip up some nutrient-dense juice with a bunch of kale? You heard it. But on the taste scale, you would probably gag without adding sweeteners or other veggies and fruits into the mix.
3. Spinach
If kale is good, then so is spinach! Spinach has a lot of nutrients like iron, calcium, potassium, and Vitamin A. No wonder a famous cartoon sailor credits this dark green vegetable for his strength!
Although, I should warn you that despite its amazing benefits, you should hold off drinking spinach juices on a daily basis or in large amounts because as an oxalate (like beet leaves and Swiss chards) it could be bad for your kidneys.
4. Cucumber
Another juicy veggie that you should be putting in your green juice would be cucumbers. Yes, I know cucumbers are technically like melons but since we’re all eating them like vegetables, then they probably count. We all know how refreshing it is to munch on. So imagine putting that in your juices!
5. Celery
Let’s admit, eating and actually liking celery can be a bit of a problem for some people. So maybe we can remedy that by juicing it together with other better-tasting greens. But just to remind you, celery is rich in several amazing vitamins and minerals, plus, it has a low glycemic index which means it’s easy on your sugar levels, which not a lot of vegetables could do for that matter.
6. Sweet Potatoes
Sweet potatoes may not be your top choice when it comes to juicing, but you have to consider everything that this root vegetable has to offer. Think about it, sweet potatoes are definitely sweet and affordable, too. Although they might be too starchy for some, if you’re looking for something to fill you up and keep your juice a bit more towards the sweeter side, then you should definitely add sweet potatoes to your ultimate juicing ingredients list.
7. Ginger
And last but certainly not least is ginger. I must admit that ginger isn’t everyone’s favorite vegetable because of its seriously different taste. But ginger has been used for centuries as a medicinal plant by ancient Chinese and even Romans, so it’s a tried and tested vegetable that gives amazing benefits to mankind! It helps relieve colds and improves digestion, plus it makes for a good maintenance drink for singers.
As if that’s not enough, ginger juice can make a mean liquid base for some awesome ginger berry smoothies, too!
