Time flies when you’re having fun!
It’s Wednesday already and for me that means it’s MidWeek Munchies Link Up time again!

Getting Fresh
One of my favorite pastimes is simply dropping by my local organic food stores, browsing the
organic produce and checking to see what’s available in season, what looks good andwhat’s priced
reasonably.
I love to nab my favorite organic produce at lower, more affordable prices.
And believe me, when I find a deal, I buy as much as I need and build my weekly menu around
those fresh, healthy organic seasonal foods.
Berries are berry precious to me, but in my urban metropolitan neighborhood they have been
much too expensive to buy a lot of them, lately.
I mean, a teeny weeny package of antioxidant rich blueberries, raspberries, blackberries
or strawberries ran about $8.99 per package.
So when I spied a large container of organic strawberries for $5.99 my heart skipped a beat!
I smiled and added two packages to my shopping cart–as visions of strawberry smoothies,
fruit salads, coconut yogurt parfaits and more, danced through my head.
Which reminds me!
Previously, I asked the store manager to start carrying unsweetened coconut yogurt–
which would taste great with my sweet organic strawberries.
I rolled over to the yogurt aisle and voila! my request had been filled.
This is actually a big deal for me because I have been so many stores trying to find
clean, simple, unsweetened coconut yogurt without sugar or carreegnan without much
success.
I was so happy to find SoDelicious UnSweetened Plain and Vanilla Coconut Yogurt that
I bought several containers.
It’s Parfait time!
Tofu, Seaweed and Greens…Oh My!
Fall collard greens are bright, fresh, firm and abundant in my local markets, so
I grabbed a couple of bunches.
Next, I rolled over to the specialty section to round out my shopping.
Since it was late and I wanted to be able to whip up a quick and delicious “meal in a minute”
at home, I added some marinated kombu recreated as Seaweed Salad, Chickpea Masala,
Baked Organic Tofu, organic cayenne pepper and turmeric powder to my cart.
My “Meal in a Minute” Moment
I was starved when I got home so as promised, I whipped together one of my favorite
“meal in a minute” veggie bowls in five minutes using some of today’s haul along with a
few leftovers on hand in my refrigerator.
I add a slice of the baked tofu, some marinated seaweed and chickpea masala to the steamer
pot with leftover sprouted rice, broccoli rabe and olives–heated it up and drenched it in
a quick broth made from the vegetable water, turmeric, cayenne pepper, Bragg’s Liquid
Aminos and crushed red pepper.
BAM! Dinner was done.
And I was one happy, satisfied vegan shopper!

I love SoDelicious coconut yogurt (and other things they make!), I haven’t seen the unsweetened vanilla – I’ll have to check it out.
