Cauliflower has become a culinary superstar recently.
From cauliflower steaks to buffalo “wings”, this versatile vegetable has been transformed into so many dishes to delight your palate.
I’ve been scrambling to catch up on many of the delectable cauliflower dishes I have not tried yet, so I purchased several fresh, firm heads of organic cauliflower from my local market.
Armed with the necessary ingredients and and spices, I was ready to make Vegan Parmesan Roasted Cauliflower “Wings”.
Benefits of Cauliflower
Many studies on the benefits of cruciferous vegetables indicate that cauliflower may be helpful in preventing
and treating inflammation-related health problems such as Crohn’s disease, inflammatory bowel disease,
insulin resistance, obesity, rheumatoid arthritis, irritable bowel syndrome, type 2 diabetes, metabolic
syndrome and ulcerative colitis.
Numerous studies link cauliflower-containing diets to cancer prevention, especially bladder cancer,
breast cancer, colon cancer, prostate cancer, and ovarian cancer.
Cauliflower:
*is a good source of fiber–with nearly 12 grams per 100 calories–providing excellent digestive
system support.
*contains sulforaphane which can help protect the lining of your stomach.
*supplies vitamin C, manganese and antioxidant phytonutrients beta-carotene, beta-cryptoxanthin,
caffeic acid, cinnamic acid, ferulic acid, rutin, kaempferol, quercetin.
*contains antioxidant and sulphur-containing nutrients to boost detoxification activities.
*contains phytonutrients called glucosinolates that can help activate detoxification enzymes and
regulate their activity.
*is a very good source of antioxidants which helps lower the risk of oxidative stress in our cells.
*is an excellent source of vitamin K which acts as a regulator of our inflammatory response.
*is capable of providing cardiovascular benefits due to its anti-inflammatory benefits.
Vegan Parmesan Roasted Cauliflower “Wings”
Makes 6 Servings
Ingredients:
2 heads organic cauliflower, broken down into small florets
3 T. crushed red pepper flakes
¼ c. extra virgin olive oil
Sea salt and freshly ground black pepper, to taste
3/4 c. vegan Parmesan cheese, freshly grated
Directions:
Preheat oven to 425° and line a rimmed baking sheet with parchment paper.
Toss cauliflower florets and crushed red pepper flakes with olive oil in a large bowl.
Season with salt and pepper, to taste.
Spread cauliflower in a single layer on baking sheet and place in the pre-heated oven.
Roast for approximately 45 minutes or until cauliflower is golden brown.
Turn cauliflower twice during roasting time so it roasts evenly.
Remove from oven and sprinkle with grated, vegan Parmesan cheese and roast for another five minutes.
Some like me, prefer to splash a dash of Sriracha sauce on my wings to make them extra spicy!
Serve immediately.
