Healthy-eating supporters all over must have seen the Google’s Food Trend Report
for 2016.
If you haven’t, Google it for heaven’s sake!
Let’s make something clear: I like eating.
I like eating healthy even better.
But most of all, I like introducing new healthy ingredients that give my favorite dishes
a healthy twist and take them to a new level.
Like pancakes.
Easy, simple and delicious sweet treats that can be turned healthy in no time.
And I know how to do it thanks to my killer cooking app MyGreatRecipes full of useful
tips and tricks and hundreds of pancake recipes.
The section “Food with a function” in the report caught my eye.
It abounds with foods popular for their medicinal properties, some of them familiar,
others completely new for me.
Apparently, more and more people are searching for healthy foods online.
Here are some popular ingredients you can incorporate into your family’s favorite breakfast.
Pancake Flour Alternatives
You might know how bad refined white flour is for you and probably use other alternatives like
whole wheat, oatmeal, almond, soy, rice or coconut flour.
This year’s trending flour-like ingredient was cauliflower rice.
Use a food processor to grate the cauliflower into the size of rice.
Mix it with eggs and cheese, onions and oil, form patties and fry to prepare savory pancakes.
Serve with sour cream on top.
Healthier Pancake Sweeteners
When it comes to sweeteners, I believe we have left refined sugar far behind us.
Health-aware cooks all over the world use honey, agave or pure maple syrup, molasses and
stevia in their pancakes.
This year Mānuka honey is on fire!
This honey is produced in Australia and New Zealand from the nectar of the mānuka tree.
Another sweetener option that exploded in 2016 was erythritol.
It is a sugar alcohol that is as sweet as table sugar, but without its negative properties: it is non-
caloric, does not affect blood sugar, nor cause tooth decay, to name only a few.
Erythritol is usually used together with other sweeteners like stevia, to produce a sweetener very
similar to table sugar.
Popular Non-Dairy Milk for Pancakes
Regular milk is usually substituted with non-dairy options like almond, soy, rice or coconut milk.
Coconut milk is the liquid that comes from the grated meat of a mature coconut and it was this
year’s most sought for milk.
Another popular search was lactose-free milk.
This can be explained by the fact that almost 30 million Americans are lactose intolerant.
Flax Eggs in Pancakes
Flax eggs became very popular in 2016 as a substitute for regular eggs.
They are an easy substitute in recipes making use of one or two egg and a great option for
vegans and people allergic to chicken eggs.
To prepare a flax egg, grind some flax seeds in a coffee grinder.
For each egg, combine one tablespoon of ground flax seed with three tablespoons of water.
Stir and place in the fridge to set for about 15 minutes.
The result should be a sticky egg-like substitute.
Kefir in Pancakes for Fluffiness
Kefir can be added instead of yogurt for fluffiness and airiness.
Kefir is a tangy and fizzy fermented milk beverage.
One cup in a standard pancake recipe will suffice.
To make homemade kefir you need a tablespoon of kefir grains and a quart whole milk
(preferably organic and non-pasteurized).
Put the kefir grains in a glass jar and fill almost full with the whole milk.
Cover with a clean cloth and let it sit for 1-2 days.
Stir from time to time with a plastic spoon.
When thick, strain out the kefir grains.
Place them in a clean jar and repeat the procedure.
Avocado Oil is the New Coconut Oil in Pancakes
Oil.
Regular vegetable oil can be replaced with olive oil, coconut oil or, this year’s hit, avocado oil.
Use it in equal amounts as other types of oil in the batter and for frying.
To sum up, this article enables you to do three things: eat your favorite sweet treats, remain
healthy and be in fashion while you do it. ☺
