We all love eating sweet things but restrain ourselves because we consider them unhealthy.
This is not necessarily true.
A few simple changes in the pancake base will turn your favorite sweet breakfast into a healthy snack.
Plus, pancake recipes allow experimenting with other ingredients that will make them even healthier
without spoiling their deliciousness.
Like those rich in vitamin B and proteins.
Find out which ingredients are rich in vitamin B and choose an easy pancake recipe to incorporate
them into.
The B complex vitamins give your metabolism a boost, which facilitates weight loss.
But first, you need to make some crucial changes in the pancake batter to make it healthier and lower
the calorie content.
You can’t expect to lose weight by eating sugary sweet treats based on white refined flour, can you?
“A few simple changes in the pancake base
will turn your favorite sweet breakfast
into a healthy snack.”
How to Make Pancakes Lower in Calories
– Replace regular flour with whole wheat, oatmeal, coconut flour, almond flour or soy flour;
– Replace regular refined sugar with honey, pure maple syrup, molasses, agave syrup or stevia;
– Replace regular milk with non-dairy milk, like almond, soy, rice or coconut milk whenever you can.
However, regular milk (preferably raw) is very rich in vitamin B;
– Use healthier vegetable oil alternatives, like olive oil or coconut oil.
Benefits of Vitamin B Complex in Pancake Recipes
Vitamin B complex consists of 8 vitamins (vitamin B1, vitamin B2, Vitamin B3, Vitamin B5, Vitamin B6,
Vitamin B7, Vitamin B9, and Vitamin B12) that work together to:
*encourage cell growth
*enhance the immune system
*enhance the nervous system
*boost metabolism
*improve skin and hair
*stabilize your mood
*increase energy levels
Vitamin B is linked to weight loss only when all forms of vitamin B are taken together.
Pancakes Rich in B Complex
Sources of Vitamin B complex are bananas, meats like turkey, tuna, liver, eggs, dairy products,
lentils, green vegetables, chili peppers, oranges, legumes and so on.
Every standard, easy pancake recipe includes eggs (one or two) and milk for extra softness and
moisture (1 ½ cup), whereas most of them also make use of yogurt (1 cup) or sour cream (2 cups)
for fluffiness.
(Note that vegans can use vegan egg substitutes for their pancakes.)
Now you have a base rich in B complex vitamins to play with.
So, let’s play!
Sweet Pancakes
Banana is a perfect ingredient for pancakes.
It can replace both flour and sugar at the same time because of its thick texture and natural sweetness.
Serve with banana slices on top, together with pure maple syrup and cinnamon.
The Orange Buttermilk Pancake recipe recommends zest of one orange in the batter and blueberry
or boysenberry syrup on top.
Combine one cup of raw, chopped peanuts (which are legumes, not nuts) in the batter together
with one cup of dark chocolate chips.
This is a healthy and delicious Snickers variation of pancakes.
Complement with melted natural peanut butter on top.
Savory Pancakes
For real gourmands, I present two exotic pancake variations.
Most of the above-mentioned ingredients can be incorporated, whether individually or mixed,
in one big, savory, exotic recipe: Korean pancake.
The Korean recipe usually combines different vegetables, with seafood/fish or without it.
I have prepared the variation that combines green vegetables and scallions, chili peppers and
soybean paste.
It is usually served with a dipping sauce consisting of soy sauce, vinegar, and sugar.
Experiment and find your favorite combo.
Another exotic recipe is the Japanese pancake.
This recipe is basically pancake batter combined with shredded cabbage and grated vegetables.
Some variations include meat or even fruits as well.
Buy okonomiyaki sauce from the supermarket to complement this amazing dish.

Some great ideas here, thank you. My favorite is the good old faithful whole wheat pancake. I make a big batch and keep them in the freezer. Then when someone in the family gets a hankering for a pancake, I just pop one in the toaster.
