This pumpkin-flavored chia seed pudding was layered with pumpkin puree and transformed into a yummy parfait topped with pumpkin seeds, walnuts, granola and drizzled with coconut milk, maple syrup and pumpkin pie spices.
Eating this easy to make Vegan Pumpkin Puree Chia Seed Pudding Parfait is like having dessert for breakfast — pumpkin pie, that is!

Vegan Pumpkin Puree Chia Seed Pudding Parfait
Ingredients
For Chia Seed Pudding
¼ cup chia seeds
1 cup unsweetened coconut milk
1 tablespoon maple syrup
¾ teaspoon pumpkin pie spice
½ cup pumpkin purée
Pinch sea salt
For Parfait
1 cup pumpkin purée (flavored with a little maple syrup and pumpkin pie spice)
2/3 cup unsweetened granola
Maple syrup
Pumpkin pie spice
Chopped walnuts and pumpkin seeds for garnish
Directions
To make pumpkin chia seed pudding:
Mix all of the chia seed pudding ingredients together in a bowl with a whisk.
Stir until completely combined and pumpkin is smooth throughout the mixture.
Taste test and adjust based on whether you want more sweetener or spices.
Set the pudding in the refrigerator — covered for 4 hours or overnight.
To make the parfait:
Remove chia seed pudding from fridge and spoon some into individual glasses.
Add a little maple syrup and pumpkin pie spice to the pumpkin puree.
Then top the chia seed pudding with a layer of pumpkin puree.
Add more chia seed pudding on top of the pumpkin puree.
Top with some granola, walnuts, pumpkin seeds and pumpkin pie spice.
Drizzle with coconut milk and maple syrup.
Sprinkle with pumpkin pie spice.
