Vegan Veggie Delight: Warm Asparagus Spears with Pine Nuts


When I was growing up, the only asparagus I ever remember eating came  from a can.
Those soft, soggy, pale green spears were clearly not one of  my favorite foods, but I was
usually chided to “eat your vegetables” so I valiantly struggled to swallow them down somehow,
thanks to significant effort and courage on my part.
Let’s face it, they tasted awful.
Fast forward to modern times.
Today fresh, organic, raw or steamed asparagus spears are often found on my plate.
Of course, these taste divine because they are nothing like those mushy, canned spears of
memory.
Tender, but not overcooked asparagus, is often a fine art.
In this easy but flavorful recipe for asparagus we simply steam the asparagus lightly
before sautéing them with red wine vinegar.
The final touch is chopped pine nuts sprinkled on top.
Just a little goes a long way.

Warm Asparagus Spears with Pine Nuts

Ingredients:
1 bunch of asparagus
1 tablespoon olive oil, coconut or oil of choice
1  tablespoon red wine vinegar
Sea salt and pepper
Chopped pine nuts

Vegan Veggie Delight: Warm Asparagus Spears with Pine Nuts

In this easy but flavorful recipe for asparagus we simply steam the asparagus lightly before sautéing it with red wine vinegar.


Directions:
Cut the ends of the asparagus stems and steam the spears for about 3 minutes.
Once the asparagus has steamed, over medium heat, heat the olive oil.
Add the red wine vinegar and asparagus and sauté for about 2 minutes.
When the asparagus starts to brown slightly it’s ready.
Season it with sea salt and pepper and topped with chopped nuts.
This lovely dish will be also be a great addition to any holiday feast!
