One of my favorite things about fall is the abundance of fresh, sweet, juicy organic apples
at my local farmer’s market.
It is also lots of fun to pick our own apples at nearby orchards.
I’m lucky because there are many within driving distance of my home–which always makes
for a fun and festive outing for family and friends.
Of course, the best part is deciding what to make with all of those apples we picked.
We end up prepping, cooking, sharing and eating all kinds of healthy and delicious apple treats.
From juices and smoothies to pies, cakes, bars, crumbles and crisps, apples rock!
They taste good, but more importantly, they are really good for us.
Great for Your Health!
A typical apple serving contains about 126 calories and provides significant dietary fiber.
Apples provide disease-fighting antioxidants which help prevent and repair oxidation damage
that happens during normal cell activity.
They also supply a modest amount of vitamin C.
It’s no surprise that we grew up with the advice that “an apple a day keeps the doctor away”.
In fact, regular consumption of apples can help to:

*Reduce cholesterol
*Curb all sorts of cancers
*Decrease your risk of diabetes
*Keep your heart healthy

Of course, the key to getting these benefits is actually eating apples regularly!
Here’s a quick, easy and nutritious vegan apple dessert to whip up in your kitchen.
Vegan Apple Crumble
Ingredients:
Makes 12 servings
7 medium organic apples (pears taste delicious too)
1/2 cup melted vegan butter or coconut oil
1 cup organic oats
1/4 cup ground organic flax seeds
1 cup coconut palm sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon apple pie spice
Directions:
Preheat oven to 350 F
Thinly slice the apples and place them along the bottom of 9 x 13 baking dish.
(There is no need peel the apples and you’ll benefit from the extra fiber.)
Melt the vegan butter slowly in a medium saucepan.
Add the oats, flax seeds, coconut palm sugar and spices.
Stir until well combined.
Spread the mixture over the apple slices.
Bake for 45 minutes.
Serve warm and preferably, with a yummy scoop of vegan ice cream!
