Meatless Monday: Simple and Satisfying Seasonal Steamed Vegetables

Sure, I love salads and I usually eat one everyday, but for me there is nothing quite as

satisfying as a bowl of fresh, crisp, al dente steamed vegetables.

They are so quick and easy to make.

And the combinations are limitless.

I love to take a quick trip to my wonderful local farmer’s market to see what’s available and

gather a selection of fresh, seasonal, organic vegetables.

It’s always fun to mix it up and try new veggies.

I try to mix textures, colors and flavors to create a pretty, appealing and delectable dish.

My favorite steamed vegetable combinations often include:

Kale

Bok choy

Mustard greens

Nappa Cabbage

Green Cabbage

Broccoli

Cauliflower

Carrots

Daikon

Parsnips

Onions

Leeks

Scallions

Celery

Mushrooms

…just to name a few.

Today I created a light and flavorful dish from the vegetables that I had on hand.

Simple and Satisfying Seasonal Steamed Vegetables

Meatless Monday: Simple and Satisfying Seasonal Steamed Vegetables

Ingredients

1 cup Organic Kale

1 cup Organic Broccoli

1 Organic Carrots

1 Organic Onion

1 ribs Organic Celery

1 ribs Organic Bok Choy

2 tablespoons Toasted Sesame Oil

2 tablespoons Coconut Aminos

1 tablespoon Black Sesame Seeds

A pinch of Himalayan or Celtic Sea Salt

A sprinkle of Red Pepper Flakes

A tablespoon of Raw Organic Sauerkraut  (on the side)

Directions:

Wash vegetables.

Slice or tear kale.

Slice bok choy into large slices.

Cut carrots, celery and onions into large chunks

Cut broccoli into florets.

Pour filtered water into the bottom of a steamer pot.

Bring to a boil.

Add carrots, celery and onions to steamer basket.

Steam for 3 minutes.

Add broccoli and bok choy to steamer basket.

Steam for 3 minutes.

Add sliced kale to the steamer basket of vegetables.

Steam for 3 minutes or until slightly wilted but still bright green.

Turn off the flame.

Place the steamed vegetables into a large bowl.

Dress with sesame oil, coconut aminos, sea salt, red pepper flakes and

black sesame seeds.

Toss gently to coat the vegetables.

Serve with a side of sauerkraut.

Enjoy.
