I have always loved asparagus, but I never really appreciated their flavor potential until a
dear friend of mine served oven-roasted asparagus at a recent dinner party.
It was love at first bite.
And for good reason…
Oven roasting vegetables is one of the best ways to bring out their natural flavors.
So this week when I found some lovely organic asparagus at the farmer’s market, I decided to
try her method myself.
This quick and easy recipe makes a great weeknight side dish that pairs well with whole grain
dishes, roasted potatoes or assorted root vegetables of your choice.
Oven-Roasted Asparagus
Ingredients
1 pound fresh asparagus, tough ends removed
2 tablespoons extra virgin olive oil
Sea salt and pepper, to taste
Fresh lemon zest (optional)
Directions
Preheat oven to 400°
Drizzle olive oil over asparagus and toss to coat well.
Arrange on baking sheet covered in aluminum foil (for easier cleanup) in a single layer.
Add salt and pepper to taste.
Roast for 25 minutes or until crisp tender.
Garnish with a little fresh lemon zest, if desired.
Serve and enjoy!

I am not a big asparagus fan, but if I happen to have some handy, roasting is definitely the most delicious way to prepare it.
Where do you live that your farmer’s market had asparagus in December?? Usually it’s an early spring crop. Was it grown in a greenhouse?

I think roasting or grilling is the only way to cook asparagus, you will never go back! Yum. It’s also good with a little shaved parmesan if you eat cheese.

Mmmmm so good! I usually boil asparagus… so boring. I love this jazzed up veggie side (or main haha!). Would make a wonderful addition to any holiday meal too!
