Hi Zee,
You post inspires me and many others, I’m sure! It’s so wonderful to read your positive spin on how to approach the challenges and situations in our lives. My motto is “Put a Smile On It.” I have found that “taking a complex situation to a happy place” can make such a difference in the outcome–as well as how you and everyone around you feels.

Today I shared my Spinach and Artichoke Dip recipe and my Funky Monkey Shake. The Spinach and artichoke dip recipe I love becasue it was a dish that my husband was known for. Every holiday or get together he was always asked to bring this. When we decided to go plant based and start our journey to become healthier everyone made comments like- “Oh well there goes the good tasting food. Or I guess all you will bring now is Tofu and cardboard.” We knew we could make great tasting food that wouldn’t hurt our bodies so he went to work on this recipe becasue he wanted to break that stereotype that plant based /vegan/ healthy recipes tasted horrible. We now take this one and everyone is blown away that “our” food is actually good!
The Funky Monkey Shake was my answer to craving a milkshake. I didnt want to ever feel like I was missing out on a favorite treat , and I LOVED milkshakes!! ButI did not love cows milk or cows milk ice cream. I found alternatives in the grocery store but they were on the expensive side. So instead of giving up I decided to come up with a healthier treat that wasn’t going to break the bank!

Thanks for hosting! I need to check out the winter energy savings post. We’ve had a really cold and snowy winter this year which is why I rounded up my emergency prep posts to share again. So far, we’re doing okay with our heating bills though I anticipate needing to heat the house well in April.

It’s so wonderful to read your creative reuses for rice. I love brown rice in particular and I try to add leftover brown rice to soups, stir fries, salads, and I also use it to make a yummy breakfast bowl with sauteed kale. I can’t wait to make this exotic twist on the Southern Style home fries i grew up eating.

Hi Barb,
What a wonderfully helpful collection of emergency prep resources you have assembled here! I was particularly interested in Emergency Preparation for Your Car and the Master Financial Information Document. After we suffered through several hurricanes and weather emergencies, we have become much more vigilant about planning ahead and being prepared. Fortunately, our residential complex has provided a list of emergency items and resources to have on hand in case of emergency as well.
