It’s Autumn and everywhere I look I see pumpkins, glorious pumpkins!
At our local farmer’s market pumpkins in all colors, textures, shapes and sizes are take
center stage and capture my attention–how can I resist bringing some home.
It doesn’t take too much convincing for me to buy pumpkins.
They taste good and are so good for us–providing enormous amounts of vitamins, minerals
and antioxidants.
Health Benefits of Pumpkins include:
*Rich source of dietary fiber, anti-oxidants, minerals, vitamins.
*A powerful source of anti-oxidant vitamins such as vitamin-A, vitamin-C and vitamin-E.
*One of the highest levels of vitamin-A–a powerful anti-oxidant that protects against lung
and oral cavity cancers, helps maintain the integrity of skin and mucus membranes plus vision.
*Rich source of natural poly-phenolic flavonoid compounds such as α, ß carotenes,
